Chicken Zorba

Ingredients

  • Zorba
    • 4 chicken breasts, cut into pieces

    • ½ tsp turmeric

    • 1 tsp cumin

    • 1 tsp dried coriander

    • juice of 1 lime
    • 200g hummus
    • 2-3 tbsps of greek yogurt
    • 1 bag of salad
    • 1 tomato
    • 1 red pepper
    • pita bread
  • Salad dressing
    • 3 tbsp extra virgin olive oil
    • 1 tbsp red wine vinegar

    • 1 tsp dijon mustard (smooth or grainy, your preference)
    • 1-2 cloves of garlic, crushed
    • salt and pepper, to taste


Method

  1. Marinate chicken in turmeric, coriander, cumin, and lime for at least 30 min, but preferably overnight.
  2. Sauté the chicken until browned and thoroughly cooked and put into bowl.
  3. Mix the hummus and the yogurt together until smooth.
  4. Whisk salad dressing ingredients together until combined.
  5. Cut up tomato and red bell pepper and toss into salad with dressing.
  6. Toast the pita and cut in half.
  7. Put the hummus mixture, chicken, and salad into each pita half.
  8. Yummy!
