- 115g unsalted butter, softened
- 200g sugar
- 2 eggs
- 1 tsp vanilla sugar
- 190g flour
- 1¼ tsps baking powder
- 1 pinch salt
- 100g Greek yogurt
- Fruit
- 140g blueberries (1 cup)
- 140g raspberries (1 cup)
- 1-2 tsps flour
- Topping
- 50g sugar
- 20g brown sugar
Method
- Preheat oven to 170°C / 340°F top and bottom heat. Line an 8×8 inch pan.
- Beat butter and sugar until light and fluffy. Add eggs one by one, then mix in vanilla sugar.
- Combine flour, baking powder, and salt. Add to the batter alternating with yogurt. Mix just until combined.
- Toss berries with a little flour. Fold most into the batter, keep some for the top.
- Spread batter into pan. Add remaining berries and gently press in.
- Sprinkle both sugars evenly on top.
- Bake 40-50 min (rack slightly below center). Cover if browning too fast.
- Done when a toothpick has a few moist crumbs. Cool 30-45 min, then slice for the perfect crack.
