Taiwanese Chicken with Rice

Ingredients

  • 3 chicken breasts
  • Rice
  • Ginger
  • Spring onions
  • Shallots
  • Soy
  • Sesame oil

Method

Put on rice for 4.

Water to cover chicken, salted

Bring the water to the boil with ginger and spring onions. Add the 4 chicken breasts, simmer for 15 minutes

Slice 8 shallots thinly. Pour in 200ml (peanut) oil to a pan. Bring to low heat, fry the shallots low and slow until soft, just beginning to brown. Take off the heat.

Slice 8 spring onions thinly. Add to the mix. Add a few tablespoons soy, 4 tbs sesame oil.

Shred the chicken when done.

Put it all together.
