Chocolate Fudge Loaf Cake

Ingredients

  • For the cake:
    • 225g unsalted butter, softened
    • 200g granulated sugar
    • 4 large eggs
    • 80ml buttermilk, room temp
    • 1 tsp instant coffee, dissolved in 1 tsp of hot water
    • 125g plain flour
    • 65g cocoa powder
    • 1 tsp baking powder
    • 1 tsp salt
  • For the icing:
    • 110g icing sugar
    • 125g unsalted butter
    • 250g chocolate chips (can use any chocolate)
    • 200ml double cream
    • 1/4 tsp salt

Method

For the cake:

  1. Line an 8.5″ x 5″ (21.5cm x 13cm) tin with baking paper. Preheat the oven to 160ºC fan.
  2. In a bowl, put in the butter and whisk until it is smooth. Then add the sugar and whisk until combined.
  3. Crack 4 large eggs one at a time into the mixture and whisk each egg until incorporated.
  4. In another bowl, mix the buttermilk and instant coffee together and add it to your mixture.
  5. Sieve the plain flour, cocoa powder, baking powder, and salt into the mixture and mix until incorporated.
  6. Put the mixture into your tin and smooth out the top. Bake for 50-60 minutes.

For the icing:

  1. Add all ingredients to a saucepan – stir on a low heat until the butter & chocolate have melted.
  2. Pour into a bowl, allow to cool, then refrigerate for at least 1 hour.
